I confess that Margot has probably been watching too many Tik Toks this summer, but I'm gonna let it slide for now because at least she sent me the idea for this ice cream cake, ha!! We have been a little bored this week, and it's also almost 100 degrees, so we decided to give it a go. Turns out it was just what we needed! Here is what we did:
Margot's Ice Cream Cake 2 party size packages of Double Stuf Oreos 1 stick of butter, melted 1 container of vanilla ice cream (we used Breyer's lactose free), softened Line an 8x8 or 9x9 pan with parchment paper so it's easy to remove the cake to cut into bars. Set aside. Put the Oreos in a plastic ziploc bag and crush with a rolling pin. You could do this in a food processor, but we personally enjoy more chunky oreos in our ice cream! Add the softened ice cream to a large bowl and fold in 1/4 or so of the crushed cookies. In a separate bowl, add the rest of the crushed cookies and mix in the melted stick of butter. Add 1/2 of this mixture to your pan and press down firmly to form the bottom crust. Add the ice cream on top and spread evenly. Pop this in the freezer until it is frozen. When the crust and ice cream are frozen remove, add the remaining crushed cookies on top and press down firmly. We used another sheet of parchment paper to do this so our hands didn't stick to the cookies. Pop back in the freezer and when it's frozen solid, it's ready to ENJOY! XO
